MARBLED MEATBALL BRUSCHETTA

Yield: 1 Serving

Ingredient                               
8 each - Baguette, sliced and baked, see recipe               
1 cup - Rosina® Wedding Soup Meatball (40049)               
2 Tbsp. - Cherry Peppers                           
¾ cup - Tomatoes, chopped                           
½ tsp. - Oregano, fresh                           
½ tsp. - Basil, fresh                                
¼ cup - Mozzarella Cheese, shredded                   
Garnish - Basil Leaves, whole                           

PREPARATION:

  1. Toss together meatballs, cherry peppers, tomatoes and fresh herbs.
  2. Place 2 Tbsp of mixture on each slice of baked baguette.
  3. Sprinkle each baguette with 1 Tbsp of mozzarella cheese.
  4. Bake at 425° until cheese is melted.
  5. Garnish with basil sprig if desired.

BAKED BAGUETTE

Ingredient                           
8 - Baguette, sliced                           
1 Tbsp. - Garlic cloves, crushed                           
¼ cup - Olive Oil                               

PREPARATION:

  1. Rub garlic cloves on each baguette slice.
  2. Brush each slice with olive oil.
  3. Bake at 350° for 5 minutes or until lightly toasted.
