TOASTED EGGPLANT SUB

Yield: 1 Serving

Ingredient                           

1 each - 6” Italian Sub Roll, sliced in half lengthwise           
4 oz (vol) - Marinara Sauce, prepared                   
3 oz (vol) - Mozzarella Cheese, shredded               
3 each - Eggplant Parmesan Cutlets (48-60170)            

PREPARATION:

1.    Fry frozen eggplant cutlets at 375° for approximately 1 to 2 minutes.  Set aside.    
2.    Spread 2 oz volume of Marinara Sauce on each half of bread
3.    Place the 3 Eggplant Cutlets on top of Marinara on bottom half of bread
4.    Top Eggplant with Mozzarella Cheese
5.    Place both halves in oven at 425° for approximately 3-5 minutes or until cheese is completely melted
6.    Serve with a side of marinara if desired

Note:  If mozzarella is unavailable you may substitute the following cheeses:
Provolone
Fontina
Parmesan
