Eggplant Napoleon of Grilled Vegetables

Ingredient                                Quantity

Herbed Goat Cheese:            
Imported goat cheese          16 oz.    
Fresh basil, chiffonade         1 Tbsp
Fresh parsley                         1 Tbsp
Fresh thyme                            1 tsp
Minced shallot                        1 Tbsp
Minced garlic                          1 Tbsp

PREPARATION:  Mix all ingredients in bowl combine well, cover and set aside.

Roasted Vegetables:
3/8” Sliced Eggplant               16 ea.
1/8” sliced zucchini                  1 lb.
1/8” sliced yellow squash      1 lb.
1/8” sliced carrot                       1 lb.
1/8” sliced red pepper             1 lb.
Extra virgin olive oil                   3 oz.
Balsamic vinegar                      3 oz.
Salt                                          To taste
Pepper                                    To taste

PREPARATION:  In a roasting pan, layout vegetables. Drizzle with extra virgin olive oil, balsamic vinegar and salt & pepper to taste. Roast vegetables in a pre-heated oven at 250°F for 20 minutes or until just cooked. Let cool.


Balsamic Glaze:
Balsamic Vinegar                            3 cups

PREPARATION: In a sauce pan over medium heat, reduce the vinegar by 2/3 allow reduced balsamic to cool to room temp.

Basil Oil:
olive oil                                    1 cup
packed, basil (fresh)            1 cup

PREPARATION:  In a blender, combine ingredients, liquefy until smooth.

Napoleon Assembly:
Using a 4” ring mold lined with plastic wrap, lay down a base of eggplant and layer chevre cheese then the roasted vegetables making sure the layers of vegetables and goat cheese are even layers. Finish with the last layer of eggplant. Wrap and refrigerate in ring mold for at least 30 mins.

Service Plating:
Remove Napoleon from ring mold and cut into quarters. Invert quarters to form a square. Place Napoleon onto middle of plate. Use fresh arugula or other bitter greens to garnish center of napoleon. Drizzle plate with balsamic glaze and basil oil. Serve chilled.
